Pecan pancakes; a yummy treasure that fills the stomach with goodness, while tickling the taste buds. We all know and love the taste of a fresh flapjack with hot butter and real maple syrup. It's a taste that makes the best morning meals. However, do you know how to actually make a pecan pancake? If not, then this is the story for you.

Southern Pecan Pancakes presented by White Elephant Bed & Breakfast Inn

Makes 16 four-inch pancakes.

Sift together dry ingredients:
1 cup all-purpose flour
1 cup whole wheat flour
1/2 teaspoon salt
4 teaspoons baking powder
1 teaspoon baking soda

In mixer, beat:
2 eggs

Add to eggs:
1/4 cup vegetable oil
2 cups low-fat buttermilk
1 teaspoon vanilla

Mix wet ingredients well. Gradually add flour mixture, beating just until mixed.

Add:
1/2 cup chopped, toasted pecans (toast in 350 oven about 7 min.)

Using 1/4 cup measure, pour onto oiled hot griddle (400 degrees) and cook until lightly browned on each side (about 3 minutes).

Sprinkle lightly with powdered sugar. Serve with maple syrup. YUMMY!

I love pancakes, but do not yet know whether I love them with pecans.

Your recipe is about double that for my normal pancake recipe (which is more than enough for one fat bo), so I suspect I would cut this by 50% as well. Looks tasty, though.

I doubt it's the pancakes... by theboz (2.00 / 0) #3 Wed Jan 10, 2007 at 11:37:27 AM EST
...but rather the recipe in your sig that are causing you problems. However, I would substitute some of the items in that recipe for healthier things, and add stuff like flax seed to your pancakes too.

Consider the source.

Maple all the way.  You know it and I know it.  He knows it too, the toll.

brian style pancakes:

use whole wheat pancake mix. follow instructions as printed on box. use omega-3 egg for egg rather than regular egg. add 1/2 pound sliced strawberries and 1 cup blueberries to mixture before pouring on griddle. serve with sugar free syrup and no butter.

if desired, 1 scoop whey protein may be added to dry pancake mix.

Peanut Butter Pancakes by ObviousTroll (4.00 / 1) #11 Wed Jan 10, 2007 at 02:28:15 PM EST
I invented this recipe in desperation, during a period when my then-toddler son wouldn't eat anything except pancakes.

I am not kidding.

    * 2 cups Bisquik or other self-rising biscuit mix
    * 1 egg
    * 1 cup milk
    * 1/2 cup creamy peanut butter

    * I have a note saying you may need to add a second egg. I guess it depends on the size of your eggs...

Mix it up, and cook 'em up. With maple syrup you'd swear you were eating Tastykake Tandycakes for breakfast. (Philadelphia people will know what I mean).

Other inventions from this period of my life included whole wheat and apple pancakes, sour milk and corn meal pancakes (still a favorite) and chocolate chip pancakes.

But don't add the pecans by ad hoc (2.00 / 0) #13 Wed Jan 10, 2007 at 03:37:38 PM EST
until you've spread the batter on the griddle. It works better that way. Just laddle them out, then put the pecans on the cakes.
