I've "learned" that you cannot use blue cheese in cooking. Stilton works poorly, both in beef burgers and for cheese on toast.

Mixing Stilton with mascarpone (and a little olive oil, because I've been nibbling my mascarpone and didn't have quite enough left) makes a wonderful cheese sauce.
